Scallop Potatoes with Ham and Green Chiles

4 lg Potatoes; sliced thin
1 lg Onion; diced
2 tb Butter or margarine
Ham to taste; diced
4 oz Velveeta cheese
2 tb Cornstarch
Green chile; chopped

Place potatoes, onions and butter in enough water to cover top of ingredients.

Cook until potatoes are ALMOST done.

Remove potatoes to a baking dish.

Add cheese to remaining liquid; let simmer till cheese is melted.

Mix cornstarch in small amount of water till smooth. Add to cheese sauce and stir till it thickens.

Add ham and green chile, pour over potatoes.

Bake in 350 degree oven 30 minutes or until sauce is bubbly and golden brown on top.
