Marinated Pork Kabobs 2 c Plain yogurt
2 tb Lemon juice
4 cl Garlic; minced
1/2 ts Ground cumin
1/4 ts Ground coriander; ground
2 lb Pork tenderloin; cut into 1-
8 sm White onions; halved
8 Cherry tomatoes
1 md Sweet red peppers; 1-1/2" pieces
1 md Green pepper; 1-1/2" pieces
In a medium glass bowl, combine yogurt, lemon
juice, garlic, cumin and coriander; mix well. Add pork; cover and
refrigerate for 6 hours or overnight. Alternate pork, onions,
tomatoes and peppers on eight skewers. Grill over medium coals for
about 30-35 minutes or until meat reaches desired doneness.
