Zesty Ham and Potato Vegetable Medley

1 tb Oil
6 New potatoes; in eights
1 lb Pkg. frozen American mixture frozen vegetables; broccoli, carrot, cauliflower
1 pk (.75 oz) garlic and herb salad dressing mix
1 c Cooked ham; cubed

Heat oil in large skillet over Medium-High heat until hot. Add potatoes. Cook for 5 minutes, stirring occasionally. Add vegetables and salad dressing mix and mix well. Stir in ham. Reduce heat to medium, cover and cook for 10 minutes or until potatoes are fork tender and vegetables are crisp-tender, stirring occasionally.
