Braised Spareribs with Fermented Black Beans 1 lb Lean beef or pork spareribs in 1-1/2" lengths
1 T Peanut oil
1 Clove garlic, peeled and crushed
1 T Light soy sauce
1 T Fermented Black beans, chopped
1 t Sugar
1/2 c Cold water
1 t Cornstarch
1 T Chicken stock or water
Heat oil in pan. Fry separated ribs 3-4 minutes until browned. Add
garlic, soy sauce, sugar, black beans and water; stir to coat ribs. Bring
to the boil. Cover and reduce heat. Simmer 1 hour. Arrange ribs on
serving plate. Skim fat from sauce, remove garlic. Mix cornstarch with
chicken stock; add to sauce. Simmer until thickened. Pour over ribs and
