Cheese-Ham Sandwich A La Suisse
8 Slices rye bread
1/4 c Sharp prepared mustard
8 Slices boiled ham
4 Eggs; separated
1/8 ts Grated nutmeg
1 c Grated Parmesan cheese
Cut crusts from bread; toast each slice on one side under preheated
broiler. Spread each untoasted side with mustard and top with a slice of
ham. Combine egg yolks and nutmeg in a small bowl; season with salt and
pepper; beat until light and creamy. Beat egg whites with 1/2 teaspoon
salt in a medium-sized bowl until stiff. Fold in egg yolks and cheese.
Pile lightly on sandwiches. Sprinkle with paprika. Put under preheated
broiler about 5 minutes, until puffy and golden.
