Pork chops
Salt & pepper to taste
Red wine
Sour cream
1 tb Strong mustard

Notch fatty edges of chops & tenderize lightly with mallet. Slowly heat iron frying pan without fat until very hot. Fry chops 3 minutes on each side; season with salt & pepper. Add a generous piece of butter & fry one more minute on each side. Remove chops from pan & place on pre-heated dish. Mix thoroughly equal parts of wine & sour cream with mustard. Bring to a boil with pan drippings, pour over chops.
