Chow Mein

1 cup chopped onion
1 cup chopped celery
1 green pepper, chopped
1/4 cup hot oil
1 can mushroom soup
2 Tbsp. cornstarch
3/4 cup cold water
1/4 cup soy sauce
2 cups (approximately) Shrimp, chicken, or pork
1 small can mushrooms, drained
1 can Chinese vegetables, drained

Combine onion, celery and green pepper; cook in hot oil for 2 minutes. Add mushroom soup. Blend cornstarch with cold water and soy sauce. Mix into soup mixture gradually.

Cook and stir until thickened. Add Shrimp, chicken, or pork as well as mushrooms and Chinese vegetables. Heat until heated through. Serve with chow mein noodles or on rice or plain noodles.
