Disguised Ham

1 c Ham -- grind
4 sl Bread
4 Eggs
Black pepper -- to taste
1 ts Salt
Yellow mustard -- to taste

Bread should be toasted on one side. Beat 3 egg whites until stiff. Combine the Ground Ham with 1 beaten whole egg and 3 yolks. Add the salt, pepper and mustard to taste. If mixture is not sufficiently moist, add a bit of milk or mayonaise. Spread mixture on untoasted side of bread. Cover this smoothly with 1/2 inch thick coating of stiffly beaten egg whites. Place in a preheated 350 degree oven and bake until egg white is delicatly brown. This is good as a brunch or breakfast dish. Good way to use leftover ham.
