Vietnamese Sweet Pork with Onions

8 oz Pork, diced
8 c Onions, medium dice
2 2/3 ts Olive oil
1/2 c Beef stock
4 tb Apple cider vinegar
4 Cloves garlic, chopped
Salt and pepper to taste

In nonstick saute pan, add oil, pork and onion. Cook pork and onion over medium heat until both are browned. When onions have carmelized to a brown color, add beef stock, vinegar, and garlic. Bring mixture to a boil, then reduce heat and simmer for 30-45 minutes. Place an equal amount of the pork-onion mixture on two dinner plates and serve
