Italian Pepper Sausage

4 1/2 lb Fresh lean pork
1 1/2 lb Fresh pork fat (fresh pork siding)
1 md Onion, chopped
1 lg Clove garlic, minced
3 tb Salt
1 1/2 tb Freshly ground black pepper
1 1/2 ts Paprika
2 tb Crushed dried red peppers
2 ts Fennel seeds
1/2 ts Crushed bay leaf
1/4 ts Thyme
1/3 c Red wine or water
1 pn Of coriander
2 1/2 Yards sausage casing

Grind the lean and fat pork, onion and garlic. Add the seasonings and mix thoroughly. Add the wine and mix well.

Force through a sausage stuffer into casing.
