Barbecued Pork Butt
5 lb Pork butt; (up to 7)
3 tb Sugar
1 tb Garlic salt
2 ts Seasoned salt
2 ts Celery salt
2 ts Onion salt
2 tb Paprika
1 tb Chili powder
1 tb Black pepper
1/2 ts Allspice
1/4 ts Ground cloves
1/4 ts Ground ginger
Combine all of the dry ingredients and blend well. Prepare the pork
butt as desired. Cook with or without the bone. Trim the cap fat.
Season all over with the seasoning mixture. Rub in if desired. Cook
on a covered, medium hot grill with a water pan for 7 to 10 hours.
