Basic Pork Filling
2 lb Pork
2 tb Achiote Fat
3 Cloves garlic, minced
1 ts Salt
1/2 ts Oregano
1/4 ts Pepper
1 Green pepper, chopped
1 c Chopped green onions
1 cn (8 oz) tomato sauce
3 Hawaiian red peppers, Minced
1/2 c Chopped Chinese parsley
Cut pork into small pieces. In a saucepan, heat achiote fat. Saute
pork, garlic, salt, oregano, and pepper; lower heat and cook 30
minutes. Stir in green pepper, onions and tomato sauce; cook 1 more
hour. Add red peppers and parsley. Makes 6 cups.
