Pork Sausage Creole Style

5 lb Pork, medium ground
1 ea Garlic clove, minced
2 ts Pepper, freshly ground
1 Crushed 2 t paprika
2 tb Parsley, chopped
1/4 ts Thyme
2 ea Onions, large, chopped
3 ts Salt
1 ts Chili pepper, dry &
1/2 ts Cayenne
1/4 ts Allspice, ground
1 1/2 c Water


Combine all ingredients, mix well and stuff into sheep casing. Refrigerate. To cook, pan-fry over medium heat until brown and all sides and cook until well done.
