Quickie Jerk Pork
1 c Vinegar
Chopped hot pepper; to taste
Chopped onion; to taste
Chopped garlic; to taste
Red pepper flakes; to taste
Salt; to taste
1 Boned leg of pork cut into bite-size pieces
COMBINE ALL THE INGREDIENTS except the pork in a non-reactive pan.
Add the pork and marinate for 4 days, turning frequently. Keep
covered in the refrigerator. Take out and wipe dry. Cook pork on a
grid over burning coals to get a smokey flavor.
