Spiced Pork Stew

2 med onions, cut in 8ths
1/4 c. raisins
2 cloves garlic, minced
1 bay leaf
1 cinnamon stick (about 2" long)
2 lbs boneless pork, trimmed of fat and cut in 1" cubes
3 tbsp flour
2 tsp ground cumin
2 tbsp firmly packed brown sugar
1 c. dry red wine or chicken broth
1 can (6oz) tomato paste
1/4 c. red wine vinegar or balsamic
salt & pepper


In slow cooker, combine onions, raisins, garlic, bay leaf and cinnamon stick. Coat pork pieces with flour, then add to slow cooker and sprinkle with cumin and sugar.

In small bowl, mix wine, tomato paste and vinegar; pour over pork. Cover and cook at low setting until pork is very tender (7-8 hours). Skim and discard fat, if necessary from stew. Season to taste.
