Plum Pork Roast

3 pound pork Roast
6 red potatoes, quartered
1 red onion, coarsely chopped
1 tsp. dry mustard
1 tsp. ground ginger
1 - 17-oz. can pitted plums with syrup
6 oz. can frozen lemonade
1 Tbsp. soy sauce

Place potatoes at the bottom of the slow cooker. Place pork roast on top of the potatoes. Puree plums in a blender and add onions, dry mustard, ginger, lemonade and soy sauce. Pour over roast and cook in the slow cooker on low for 4-5 hours or until pork is fully cooked.
