New Year's Pork

1. 5 pound pork roast or tenderloin
1 14-oz. can chicken broth
3 T Dijon mustard
4-5 cloves garlic
1 T Worcestershire sauce
salt and pepper
1 T + 2 T cornstarch
1 14-oz. can black-eyed peas
baby carrots
small onion

Trim fat and brown pork roast in skillet. Combine in bowl: can of broth, crushed garlic cloves, mustard, Worcestershire, salt and pepper, and 1 T cornstarch. Mix well. Put roast, carrots, chopped onion, and the peas in the slow cooker. Pour sauce over. Cook at 300 for 8 hours or so. Stir in rest of cornstarch and stir sauce well about 1/2 hour before serving. Serve with cornbread and coleslaw.
