Pork in the Pot

1 bag fresh sauerkraut, drained
1 cup brown sugar
1/4 cup molasses
1 Granny Smith apple, cored and sliced in eighths (peeled or not, as desired)
1 medium onion, sliced
1 tablespoon lemon juice
1 (2- to 3-pound) boneless pork roast
4 to 5 potatoes, peeled and cut in chunks
4 to 5 carrots, peeled and cut in chunks

Place drained sauerkraut in bottom of a 6-quart slow cooker. Top with brown sugar, molasses, sliced apple, sliced onion and lemon juice. Stir to mix in. Place pork roast on top. Arrange potatoes and carrots around roast. Cover and cook on low for 8-10 hours. Makes 6-8 servings.
