Hominy Pork Stew

1 lb. pork chop suey meat, cut into 1/2" cubes
2 cans (15 oz. each) hominy, drained
1 can (8 oz. ) tomato sauce
1 med. onion, chopped
1 bay leaf
1 tbsp. chili powder
1tsp. each dried basil, oregano and parsley flakes
1 tsp. ground cumin
Warmed flour tortillas, shredded
Monterey Jack cheese, sliced
Green onions and lime wedges, optional

In a slow cooker, combine the pork, chili, hominy, tomato sauce, onion and seasonings. Cover and cook on HIGH for 4 hrs. or until meat is tender. Discard bay leaf. Serve with tortillas, cheese, green onions and lime wedges, if desired.
