Pork bean and sweet potato stew

1 (15-oz. ) can black beans
1 1/2 lbs. boneless lean pork loin, fat trimmed
1 large onion, sliced
2 tsps. minced garlic
1 tbsp olive oil
3/4 cup orange juice
1/2 cup packed light brown sugar
2 tbsp Dijon-style mustard
3 small sweet potatoes, peeled, cut into 1 1/2-inch pieces

Place beans into slow cooker.

Cut pork roast into 6 slices, 1 1/2 to 2 inches thick. Cut slices in half. In a medium-size skillet, brown pork loin pieces with onion and garlic in oil.

Transfer pork mixture to slow cooker and add in orange juice, sugar, mustard and sweet potatoes.

Cook on low for 8 hours. Stir and serve.

Serves 6.
