Pork Chops with Minted Herb Relish

2 medium tomatoes chopped
1 tablespoon chopped fresh basil
1 tablespoon chopped fresh mint
1 small jalapeno chile seeded and finely chopped
2 teaspoons chopped fresh chives
2 teaspoons Dijon Mustard
1 teaspoon prepared horseradish
1/8 teaspoon ground black pepper
1/4 teaspoon salt
5-6 pork chops or cutlets

In a small bowl, combine tomatoes, basil, mint, jalapeno chile and chives. Cover and refrigerate. In a small bowl, combine mustard, horseradish, salt and pepper. Spread on one side of each pork chop. Place chops in a 3 1/2 quart slow cooker. Cover and cook on low about 4 hours or until meat is tender. Serve with chilled relish. Makes 5-6 servings.
