Cajun Meatloaf

1 Onion; chop coarse
4 Cl garlic; chop fine
3 tb Chili powder
1 ts Paprika
3/4 ts Salt
1/8 ts Cayenne
1 tb Olive oil
1 c Tomato juice
1 lb Ground beef
1 lb Ground pork
2 sl Whole-wheat or white bread; tear sm pcs
2 Eggs; lightly beaten
2 tb Worcestershire
1/2 ts Sugar
1/4 ts Hot pepper sauce


Cook onion, garlic, chili powder, paprika, salt and cayenne in oil in nonstick skillet, covered, over low heat, stirring occasionally, until onion is softened but not browned, 10 minutes. Remove skillet from heat. Stir in tomato juice. Cool slightly. Combine beef and pork in a bowl. Add bread, eggs, Worcestershire, sugar, hot pepper sauce and onion mixture; mix lightly but thoroughly. Place mixture in a 9x5 loaf pan. Bake in 350~ oven for about 1 hour or until an instant-read thermometer inserted in the center of the loaf registers 160~. Let stand for 10 minutes. Carefully pour off the excess liquid from the pan. Invert loaf onto plate. Invert right side up on serving platter. Slice.
