Black and White Chili with Pork
3/4 pound boneless pork -- cut into 1/2" cubes
1 can black beans (15-oz) -- drained and rinsed
1 can small white beans (15-oz) -- drained and rinsed
1 red or yellow bell pepper -- chopped
1 medium tomato -- peeled, seeded and chopped
1 small onion -- thinly sliced
1 clove garlic -- crushed
1 teaspoon ground cumin
1 tablespoon chili powder
1 can tomato sauce (8-oz)
1/3 cup low-fat yogurt or sour cream
2 tablespoons chopped fresh cilantro
Combine pork, beans, bell pepper, tomato, onion, garlic, cumin, chili powder, and tomato sauce in a 3 1/2-quart slow cooker. Cover and cook on LOW about 6 hours or until pork is tender.
Ladle into individual bowls. Spoon about 1 tablespoon yogurt or sour cream on top of each bowl; sprinkle with cilantro.
