Fried Rice With Curried Meatballs

1 c Rice -- uncooked
1/2 lb Ground pork
1/2 lb Ground turkey
3 tb Dry bread crumbs
5 ts Curry powder -- divided
2 md Carrots -- halved & sliced
1 sm Zucchini -- halved & sliced
2 md Garlic cloves -- minced
2 md Scallions -- cut in 1" pieces


Cook rice in boiling salted water, according to package directions until tender. Meanwhile, in a large bowl, combine ground pork and turkey, bread crumbs, 1 tsp curry powder and salt. In a large nonstick skillet, over medium-high heat, heat 1 Tbs oil. Add meatballs and brown well. Add carrots, cover and cook 5 minutes. Stir in zucchini, garlic and scallions and cook until tender, about 10 minutes. Push vegetables and meatballs to one side of pan. Add remaining 1 Tbs oil to pan and sitr in remaining 4 tsp curry powder. Add rice and cook, stirring until heated through, about 5 minutes.
