Apple Pork Curry 2 lb Lean pork, cut into 1/2" Cubes
1 Apple Peeled and chopped
1 small Onion -- chopped
1 Clove garlic -- crushed
1 tsp Concentrated chicken broth
1 Tbsp Curry powder
1/8 tsp Cinnamon
2 tsp Ground ginger
1/2 tsp Salt
1/2 cup Orange juice
In slow cooker, combine the above ingredients. Cover and cook on low 5 or 6 hours or until pork is tender. Turn pot on high. In a measuring cup, combine 2 Tbsp cornstarch and 2 Tbsp cold water. Stir into pork mixture. Cover and cook until thick. Serve over rice and pass around peanuts, coconut, raisins, and chutney as condiments. Apple Pork Curry printer friendly version located here.
