Pan-fried Pork Chops With Homemade Applesauce

Pork Chops
4 Loin pork chops; 1 inch thick
Salt and fresh-ground pepper; to taste
4 tb Unsalted butter
1 tb Olive oil

Applesauce
12 Tart apples; peeled and chopped
1/2 c Water
1 Lemon; zest only
1 tb Honey
2 ts Cinnamon
1 ts Fresh ground nutmeg

How to Prepare the Pork Chops:

Season the pork chops on both sides with salt and pepper.

Heat the butter and olive oil in a 12-inch cast-iron skillet; place the pork chops in and sauté until golden brown on one side, about 5 minutes.

Turn the chops over and continue cooking another 5 minutes or until done. Remove and keep warm.

How to Prepare the Applesauce:

Put the apples and water in a heavy-bottomed saucepan, cover and cook over medium heat until the apples are soft, 15-20 minutes.

Mash apples with a heavy spoon, leaving some lumps. Stir in the zest, honey, cinnamon and nutmeg.
