Kansas City Barbecued Ribs

1 c Water
1 c Catsup
3 tb Vinegar
1 ts Sugar
1 tb Worcestershire sauce
1 ts Celery seed
1/4 ts Bottled hot pepper sauce
Salt, pepper to taste
4 lb Pork loin back ribs or meaty spareribs


Sauce: Combine water, catsup, vinegar, sugar, Worcestershire sauce, celery seed, and bottled hot pepper sauce in a saucepan. Heat to boiling. Reduce heat and simmer, uncovered, for 30 minutes, stirring occasionally. Sprinkle ribs with salt and pepper. In a covered grill, arrange medium-high coals around a drip pan. Test for medium heat above the pan. Place ribs, meaty side, up, on grill rack over drip pan. Cover and grill for 1 1/4 to 1 1/2 hours or till ribs are tender and no pink remains, brushing often with sauce the last 15 minutes of grilling. Or, preheat gas grill. Adjust heat for indirect cooking. Test for medium heat where ribs will cook. Place ribs, meaty side up, on grill rack over drip pan. Cover and grill as directed. Makes 4 servings
